Low-fat taco pasta salad

IMG_0491.PNGThis one is a recent favorite of mine, I was expirmenting for a party and it ended up pretty damn good👌🏼

Ingredients:

one box true colored rotini pasta

one bottle of fat free Catalina dressing

one can sliced black olives

one pound ground chicken

one taco seasoning packet

one cucumber sliced

one cup sliced cherry tomatoes

2 cups Mexican shredded cheese

one bag shredded ice burg lettuce

small tortilla strips to garnish pasta

directions:

cook ground chicken througholy and follow instructions on back of taco seasoning packet, let cool. Then go to cook your pasta once cooked, rinse with cold water, pour entire bottle of catalina dressing in with pasta and ground chicken then mix all the other ingredients together. Refrigerate at least an hour before serving. Then when served, garnish with tortilla strips.

30 cal soup you can eat all day

IMG_0490.PNGI seriously want to be eating all day.. fries, chips, burgers, anything. This soup is good for people like me, this soup you can eat all day! It’s a damn good tasting body cleansing soup😉

Ingredients

one onion

two bell peppers

one jalepeno

2 sliced up zucchini

one bag shredded green cabbage

beef broth 8 cups

one can tomato sauce

1 1/2 tbsp Italian mixed seasonings

2 tbsp minced garlic

directions:

you can cook this soup in two different ways.. from the crock pot so you can have your soup cook all day, or from the pot.. either way the preparations to both are the same.

chop up all vegetables into bite sized pieces, then bring broth to your pan or crock pot then mix all other ingrediants with it.

For those cooking in the pot.. cook on low for 8 hours or high for 4 hours, for those using the pan, let simmer for 1 hr to 1 1/2 hours depending on how soft or hard you would like your vegetables.

*adding shredded chicken or beef to this recipe would be a great way to get more protein in your diet and will keep you fuller longer.

Cheesy, beefy, ricey burrito 😯

img_0488After a long hard day at the office, I don’t know, your boss hit on you, you got that crappy customer who makes you cringe when you see them.. whatever the case might be.. a good burrito sounds pretty appetizing.

Ingrediants:

large flour tortillas

1 pound ground chuck

velveeta melting cheese

can of salsa

yellow rice

beans (your choice)

shredded lettuce

diced onions and peppers

taco mix

directions:

get that rice cooking, cook ground beef till brown, drain oil, follow instructions on taco mix package and finish that with the ground beef. From there, add 3 1 inch pieces of cheese in pan, can of salsa, diced onions and peppers, and can of whatever beans you choose. Mix until all cheese is melted. Place rice in tortillas, then the ground beef mix, and toppings of your choosing.. wrap it up and make you and your man happy 😏

Easy enough?

Shredded beef fajitas

img_0487So, this is my first post.. I guess I should introduce myself. I nannied for three years so cooking was an every night thing… I found many ideas and made up some awesome, easy recipes that EVERYONE will love.

Anyways.. this is the 21st century, I really hope you own a crock pot, if not get your crap together and get one because most of my recipes are with the pot👌🏼

Ingrediants:

one pound of any steak of your choosing (I like ribeyes, just sayin’.)

fajita mix packet (follow instructions for mix)

2 bay leaves

tacos/tortillas

one pepper, one onion

mozzarella cheese

any toppings you and your family would enjoy..  lettuce, onions, black olives, sour cream, tomatoes, guac, you know all those goodies.

directions:

Chop your pepper and onions into small pieces, make your fajita mix, put Bayleaf’s diced onions and peppers with mix.  Pour half of the mix in the crockpot, then please beef on top of mix following pouring the rest of the mix on top of the beef. Put the crock pot on low and cook 8-9 hours, when you get home or go to your pot after the 8-9 hours mix everything in the pot and the beef should shred easily. Get all of your toppings and tacos/tortillas and start eating!

I personally like yellow rice and beans (any of your choosing) on the side.
